Donut Kitchen's treats are irresistible

WITH a heavenly mixture of flavours and even vegan options, the Donut Kitchen's smell alone draws in Caloundra Street Fair customers.

Owner Jamie Loft is the last person you would expect to see behind the food-van counter, though, considering he has a construction background - one that he followed for 18 years.

But Jamie said he had been looking for something simple yet fun after all that time and this led to him drawing on childhood memories of visiting the American donut kitchen at the Queen Victoria Market in Melbourne.

"There was nothing better than being able to get delicious, warm, soft and fluffy jam donuts straight out of the fryer, so we wanted to do something similar,” he said.

"It wasn't an easy process: we trialled our dough mixes for almost eight months before settling on our secret dough recipe, and even after then we have tweaked it quite a bit until now we have what we and our customers consider an amazing flavour.”

While Jamie and his team have never moved away from their original idea of providing the freshest, highest pillows of sweet-dough donuts, they have considered the variety of individual tastes and dietary requirements and developed a recipe for the vegan-conscious, as well as vegan, diary-free filler options.

This has meant that their Donut Kitchen has irresistible fillers for just about everyone - from the traditional jam favourite to Nutella and Tim Tam donuts and new creations Ferrero Rocher and lemon sherbet. Jamie's daughters prefer the Nutella donuts but vanilla custard and salted caramel are also popular.

Donut Kitchen also offers glazed donuts and is trialling a new dough mix using Dutch cocoa.

"We are also doing a chocolate donut and an expresso donut because in our business, it is about tweaking the glazes and toppings randomly - meaning we are sticking with what customers are buying regularly as well as tempting them with something new,” Jamie said.

"Like us, I think everyone has childhood memories of donuts of some kind and we meet those thoughts with our freshness.

"Everyone is always so excited to see that we make to order because you can't get any fresher than that.

"Our customers appreciate that we don't buy donut blanks full of preservatives and decorate them.

"We make the dough, roll it, proof it, fry it and fill them.

"We control the whole process, and we love the comments we get from people about our donuts.

"We also have a new range of gluten-free dough balls and donuts, available at selected markets, and we have a cool new pop-top trailer about to launch for wedding and personal and corporate events - all based on the same model of made to order.”
